Fettuccine & Smoked Salmon Alfredo
Oh boy, you won't believe the delicious aroma reaching you when combine these ingredients and put them on your fresh home made fettuccine! Truly a dinner to die for!
12 oz. fresh or packaged Fettuccine, uncooked
1 tbsp. good olive oil
small amount of unsweetened butter
2 large garlic cloves, pressed
1 tbsp. all-purpose flour
1 cup whole milk or cream if desired
1 cup grated Parmesan cheese
1/3 cup non-fat sour cream
1 tbsp. chopped fresh dill
2 oz. capers
8 oz. smoked salmon, cut into bite-sized pieces
Heat butter and olive oil to med in a saucepan over low heat. Add garlic; cook 1 minute. Add flour, stirring constantly. Gradually stir in milk; cook, stirring constantly, until thickened. Add and sour cream and warm completely before adding Parmesan cheese; cook and stir until cheese melts. Wisk in dill. Set away from direct heat and keep warm.
Cook fettuccine according to your preference and drain. Place in a large bowl, add salmon, capers and sauce. Combine well seasoning with salt and pepper if desired. Serve immediately, while still warm.
