Spinach Pesto

Here is a perfect easy to fix meal for warm summer days or cold winter evenings. You can substitute frozen spinach if you can't find fresh. What an excellent way to use your fresh made pasta from your new pasta making machine. Everyone will simply adore it!

1 pound freshly made Spaghetti, Linguine or Thin Spaghetti, uncooked (you can use packaged pasta if you must)
10-oz. fresh spinach, or frozen spinach thawed & well drained
2 tbsp. virgin olive oil
1/4 cup grated Parmesan cheese
2 tbsp. chopped parsley
2 cloves garlic
1/2 tsp. salt
4 leaves fresh basil or 1/2 tsp. dried basil
1/3 cup water
4 oz. crumbled feta cheese

Prepare pasta according to your preference; drain. In blender or food processor, combine spinach, oil, parsley, garlic, and basil. Blend at medium speed or process until finely chopped. With blender or processor running, gradually pour in olive oil until blended. Add Parmesan cheese adding salt and pepper to taste. Toss with pasta in a large bowl. Sprinkle feta on top and serve.
